Make this chowder when fresh corn is sweet and in season. Chock full of vegetables and grilled shrimp, it’s hearty enough for a light dinner. I prefer serving it lukewarm rather than piping hot, making it a nice choice for summer dining.
Corn husks are peeled back and the silks are removed. Rewrap the corn, and place on a hot grill. Grill until the husks are charred and the corn is tender, about 15 to 20 minutes, turning occasionally.

| Roasted Corn Chowder with Grilled Shrimp |
- 4 ears corn, unhusked and silks removed
- 3 T. olive oil
- 1 medium onion, cut into 1/4″ dice
- 1 medium carrot, cut into 1/4″ dice
- 1 medium celery rib, cut into 1/4″ dice
- 2 garlic cloves, minced
- 1 medium red pepper, seeded and cut into 1/4″ dice
- 1 quart chicken stock
- salt and pepper to taste
- 1 cup fresh cilantro leaves
- 1/4 cup olive oil
- 12 jumbo shrimp, peeled and deveined
- Lightly oil the grill grate
- Grill corn with the husks but silks removed until tender 15-20 minutes
- When cool enough to handle, husk, and remove the kernels in wide sections
- Heat 3 T. oil in saucepan and add the onion, carrot, celery and garlic
- Cook for 5 minutes to soften
- Add the corn and cook 10 minutes
- Add stock, bring to a boil and then reduce the heat to low and simmer for 10 minutes.
- Season with salt and pepper
- Make cilantro oil by blanching the leaves in boiling water for 10 seconds
- Drain and rinse under cold water
- Squeeze out excess moisture and transfer to a small mini processor
- Add 1/4 cup olive oil and process until smooth
- Season with salt and pepper
- Pour into a small bowl and set aside
- Toss shrimp with 1 T. olive oil and season with salt and pepper
- Grill, turning once, until pink
- Ladle soup into deep bowls
- Arrange shrimp in a mound in the center of each bowl (3 per bowl)
- Drizzle with a little cilantro oil






Great alternative to all the “creamed”versions…lighter, but still looks very flavorful.
